Happy Saturday friends! I don’t know about you guys, but things have been real busy around here. We’re in the middle of moving from our temporary apartment to our new apartment just south of Zurich, and between moving our belongings, unpacking boxes that have been in storage for months and organising all of the miscellaneous bits and bobs for the new place, we’ve had our hands quite full! As busy as it’s been, I’m so happy that we have finally found a more permanent place to live - it feels like we are actually starting our life here rather than being in between places. Hurray!

Needless to say our meals have been super basic lately. We’ve been relying on frozen leftovers from meals earlier in the month (I knew future me would thank me!) and random fridge clear-out dinners. I do miss spending more time in the kitchen, but at the same time it’s been nice to really focus on the move. As always, we’ve also been enjoying smoothies as quick and easy breakfast options, and this pretty pink smoothie is my favourite variation of late. It’s loaded with all kinds of good stuff, including hemp seeds, almond butter, frozen raspberries and banana.

Pretty pink smoothie {vegan & gluten free}

This pink smoothie comes together in no time - perfect for those busy mornings or when life just gets a bit crazy. I used white almond butter to keep the colour of the smoothie nice and light, but you can certainly use regular almond butter in its place.

Ingredients:

  • 1 frozen banana, chopped

  • 1/2 cup | 70 g frozen raspberries

  • 2 tbsp hulled hemp seeds, plus more to garnish

  • 1 tbsp white almond butter

  • 1/4 tsp vanilla powder

  • 1 tsp maple syrup

  • 1 cup | 240 mL unsweetened almond milk

Method:

Place all ingredients in a high-speed blender or in the container of a hand blender. Blend until completely smooth, and top with additional hemp seeds as garnish. Enjoy straight away.

Serves 1.
