And... I'm back! I've been really out of luck for the past couple of weeks. I caught a bad cold which had me feeling really run down for the better part of a week. Just as soon as I started feeling better last weekend, I got hit with the stomach flu. Today I am finally beginning to feel like myself again and have slowly started to reintroduce normal foods into my life - thank goodness (life was so bland on white rice and bananas)! And just in time, because today in less than two weeks I'm leaving for my bachelorette party in Lisbon and in exactly 3 weeks it will be our wedding day. Time does fly!! But on to the recipe...

I've been wanting to share this individual cranberry-chocolate bircher pot recipe with you for quite a while now. I love making bircher muesli for breakfast because it's very tasty and so easy to pull together, but I find that making a large batch isn't always convenient. So I set out to create a recipe for single-serve bircher muesli pots. As a base I used gluten free large flake oats and chia seeds. For a bit of protein I threw in some pepitas and for some fruity tones some dried cranberries. To round it off I added some chopped 70% dark chocolate because I just love my chocolate! And to tie it all together the whole thing gets coated in vanilla and maple-kissed almond milk. Ahh, yes.

Individual cranberry-chocolate bircher pots

This is my most recent take on bircher muesli. This recipe makes a single-serve sized pot of bircher so it's perfect for making the night before and grabbing on your way out the door. The recipe can easily be multiplied to make as many pots as needed. The dark chocolate and cranberries make for a really decadent combination that's akin to dessert - just my kind of breakfast.

 Ingredients:

  • 3 tbsp old fashioned rolled oats (gluten free if needed)
  • 1 tbsp pepitas
  • 1 tbsp dried cranberries
  • 1 tbsp chia seeds
  • 1 tbsp chopped dark chocolate (at least 70% cocoa solids)
  • 1 pinch vanilla powder (or 1 dash vanilla extract)
  • 1 pinch pink or sea salt
  • 1/2-3/4 cup almond milk (or milk of choice)
  • 1 tsp pure maple syrup

Method:

In a small jar (I tend to use a 250 mL Kilner preserve jar or an old jam jar), add the rolled oats, pepitas, chia seeds, cranberries, chopped dark chocolate, vanilla powder and salt and mix to combine. Next add the almond milk - add 1/2 cup if you like a less liquid consistency, or add up to 3/4 cup if you want it on the runnier side (I prefer mine with a bit more almond milk). Add the maple syrup and give the mixture a good stir. Close the jar, and place it in the refrigerator overnight or all day. That's all there is to it - just don't forget to pack a spoon with you!

Serves 1. Keeps in the fridge for a couple of days.
