This summer's heatwave has certainly influenced the recipes I've been posting lately - my favourites have included summery salads, no-cook sauces and chilled breakfasts like bircher muesli, because the thought of turning the oven on or standing over the stove seemed a little bit unbearable. Needless to say I don't cope very well in the heat, and so I found the last month in the big city particularly intense (my tube line isn't air conditioned and there's no cross-breeze in my tiny apartment). For the first time in a long time, I was absolutely ecstatic to see rain on the weather forecast and have been enjoying the wet weather this weekend! Have I become a true Londoner?!

I have to say that the hot weather did give me lots of recipe inspiration. Not only for salads, but for sweet things like this granola! I've called this recipe 'heatwave' granola because you don't need to turn the oven on to make it and it only takes a cool 15 minutes to make. With a handful of simple ingredients, this is the granola you want to be making in the middle of a hot summer. It's not chunky like granola that's made in the oven, but it sure does the trick and is perfect for adding texture and crunch to smoothies and yogurt or eating straight up as a hiking snack. Plus, if you're making this recipe during a hot summer it's a one-bowl thing because your coconut oil is probably already liquid at room temperature!

Heatwave granola {vegan & gluten free}

This is my new favourite way to make granola during the summertime. This recipe doesn't require you to turn on the oven and uses only a handful of simple ingredients. With a quick cooking time of 15 minutes, you'll be using this gorgeous golden granola on top of fresh smoothies and yogurt or eating it as a quick snack in no time!

Ingredients:

  • 1 1/4 cups | 115 g gluten free large flake oats
  • 1/4 cup | 20 g almond flakes
  • 1/4 cup | 25 g desiccated coconut
  • 2 tbsp flax seeds
  • 1 tsp ground cinnamon
  • 1 good pinch sea salt or Himalayan pink salt 
  • 2 tbsp coconut oil, melted (or room temp if it's hot outside!)
  • 2-3 tbsp pure maple syrup (adjust depending on how sweet you want your granola)

Method:

Place the oats, almond flakes, coconut, flax seeds, ground cinnamon and salt in a medium bowl and mix to combine. Pour over the coconut oil and as much maple syrup as desired and mix to combine, coating the dry ingredients with the wet ingredients evenly.

Heat a large non-stick frying pan over medium-low heat. Add the granola mixture to the pan, and gently cook stirring with a wooden spoon very regularly for 10-15 minutes, until the granola is a beautiful golden colour. Make sure to stay close to the stove during this process and to stir the granola very regularly, as it can quickly burn (I learnt this the hard way while developing this recipe!)

Once the granola is ready, allow to cool completely and transfer to a glass jar.

Makes one 500 mL jar of granola.
