These are the simplest, quickest and tastiest breakfast wraps ever. I came up with the recipe one late Saturday morning when I was super hungry and needed something quick and satisfying to eat. I usually have eggs and avocado in the house, so my go-to quick meal is avocado toast with fried eggs (I normally keep slices of this life-changing loaf in the freezer). I was all out of bread that day but noticed that we had some leftover wraps in the cupboard from burrito night (I recently discovered these tasty gluten free sweet potato wraps). And so I decided to venture into the world of breakfast wraps.

All I have to say is... how on earth have I only started having wraps for breakfast just now?! These things are amazing - filling yet light at the same time, and super quick to throw together. For these wraps, you warm up the sweet potato wrap for a minute or so (this makes it easier to fold up). Then, you place a few thin slices of cheddar cheese in the centre of the wrap, add two fried eggs on top, a drizzle of hot sauce, a few slices of avocado, and a handful of micro-greens. Fold it up, slice it in half and that's all there is to it!

Gluten free breakfast wraps

These breakfast wraps are super easy to throw together and make a great quick breakfast. I use gluten free wraps, but you can certainly use regular flour wraps instead. 

Ingredients:

  • 2 eggs
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 gluten free wrap/tortilla
  • 1/4 avocado, sliced lengthwise
  • 2-3 thin slices of cheddar cheese (see photo above)
  • Hot sauce, to taste
  • 1 handful micro-greens

Method:

Heat the olive oil in a small skillet over medium high heat. Once hot, add the eggs one at a time, slightly breaking the yolks. Top with a bit of salt and pepper, and fry until they are done to your liking - I normally cook mine two to three minutes on the first side, then I flip them over and cook for another minute, so that the yolks are almost completely cooked but still electric yellow and slightly runny.

When the eggs are almost done cooking, warm up the wrap for one minute in a preheated oven, a warm skillet or a microwave.

Transfer the warmed wrap to a plate and arrange the cheddar slices in the middle of the wrap. Next add the fried eggs on top, followed by the avocado slices, a drizzle of hot sauce and the micro-greens.

Fold as you would a normal wrap or burrito (see here for a how-to guide), slice in half and enjoy!
