You know those sweet treats that remind you of your childhood? Your favourite cookie recipe your mom used to make around the holidays, or the cake you always ask for on your birthday? For me, that special recipe is the no-bake chocolate drop cookie my mom used to make when we were little.

I've been making my own version of those cookies for some time now, though I had never actually tried making the original ones. During my visit back home last month I asked her if she still had the original recipe - and indeed she did! Comparing my rendition to the one in her old cookbook, I had made quite a few modifications. Instead of using butter and sugar for the fudge-y chocolate mixture that gets poured over the oat mixture, I use almond butter, coconut oil and maple syrup. The end result is something just as delicious in my view - not overly sweet, very chocolate-y and super satisfying. My older sister did point out that my version is a bit chewier than the original version, but I'm totally fine with that.

Instead of being baked, these cookies are left to solidify in the fridge after they've been assembled. Now, if I had a larger freezer I'd probably put these cookies in the freezer. But living in London, the tiny freezer real estate that comes with my flat (think the size of a shoe box) just doesn't allow for that. So I just keep these cookies in the fridge and only take as many out as we're going to eat.

After they come out of the fridge, the cookies are a bit less chewy and a bit more solid. I love making no-bake cookies in the summertime, especially when temperatures have been has high as they were recently (thank goodness it's cooled down a bit since then!)

No-bake chocolate cookies (vegan & gluten free)

These no-bake chocolate cookies are based on the ones my mom used to make for us when we were little. Instead of butter and white sugar, I use almond butter, coconut oil and maple syrup. I normally store these cookies in the fridge, but I think they'd also be nice kept in the freezer. 

Ingredients:

  • 2 cups gluten free rolled oats
  • 1 cup desiccated coconut
  • Pinch pink or sea salt

  • 1/2 cup pure maple syrup
  • 1/2 cup smooth almond butter
  • 2 tbsp coconut oil
  • 1/2 tsp vanilla powder (or vanilla extract)
  • 1/2 cup almond milk
  • 3 heaping tbsp cocoa powder

Method:

Line a baking sheet with parchment paper and set aside.

To a large mixing bowl, add the rolled oats, coconut and salt and stir until combined. Set aside.

Add the maple syrup, almond butter, coconut oil and vanilla powder to a small saucepan. Stir over medium heat until combined. Whisk in the almond milk and cocoa powder until combined, and remove from heat.

Pour the cocoa mixture over the oat mixture, and stir with a wooden spoon until incorporated.

Using a spoon or a small ice-cream scoop, drop tablespoon-sized balls of the mixture onto the prepared baking sheet. Refrigerate for at least half an hour (preferably longer) before serving.

Makes 20-25 cookies. Store in an airtight container in the refrigerator for a few days, or longer in the freezer.
