I can't believe that we're approaching the middle of February already - is it just me, or is 2017 just flying by? At this rate, I have a feeling that spring will be upon us in no time, and I couldn't be more glad! I'm starting to get tired of the grey and chilly days we've been getting in London lately...

For today's post, I thought I'd get into the Valentine's Day groove and share a seasonal favourite with you - chocolate covered strawberries, 3 ways! But let's get real - I don't only reserve these tasty treats for the month of February, because they're so delicious and come together with minimal time and effort. I generally prefer to make chocolate covered strawberries when berries are in season, but I tend to make exceptions for special occasions.

Chocolate covered strawberries are one of my favourite sweet treats - yes, I do love anything that includes chocolate, but I also love dessert options that pretty much everyone can enjoy. I make my chocolate covered strawberries with 70% dark chocolate, which means they are vegan-friendly, and they are of course naturally gluten free. They're also a bit healthier than your average dessert, which is always an added bonus in my opinion. I often just stick with the plain version, but chocolate covered strawberries are very adaptable and can be dressed up with a variety of different toppings or a drizzle of white or milk chocolate. I opted for chopped pistachio and desiccated coconut this time, and they turned out beautifully. I imagine that chopped hazelnuts, toasted almond flakes or chopped walnuts would also be nice, and I'd like to try a version with dried rose petals and lavender buds in the future.

Chocolate covered strawberries 3 ways: plain, pistachio and coconut

I like to use dark cooking chocolate for my chocolate covered strawberries, making them vegan-friendly (my favourite is Green & Blacks 70% organic dark cooking chocolate). They taste great plain, but are also lovely dressed up in chopped pistachio or desiccated coconut. Feel free to play around with different toppings - I imagine that a drizzle of melted white/milk chocolate or different types of chopped nuts or seeds would also work well here.

Ingredients:

  • 150g 70% dark cooking chocolate, broken into small chunks
  • 1/4 cup finely chopped pistachios
  • 1/4 cup desiccated coconut
  • Approx. 800g fresh strawberries, washed and patted dry with a paper towel or tea towel

Method:

Line a baking sheet with parchment paper and set aside. Add the chopped pistachios and desiccated coconut in an even layer onto two small separate plates and set aside (if using toppings).

Melt the dark chocolate in a small saucepan over low heat, stirring often. When the chocolate is completely melted, remove from heat. Tilting the saucepan so that the melted chocolate pools to one side, dip a strawberry into the chocolate holding it by its stem and rotating it in order to coat the entire surface of the berry. For the plain version, place the chocolate covered strawberry on the parchment-lined baking sheet. For the pistachio or coconut version, gently roll the chocolate covered strawberry in the topping of choice before placing it onto the parchment-lined baking sheet. Repeat with the remaining strawberries.

Place the baking sheet in the refrigerator for approximately 15 minutes, or until you are ready to serve the chocolate covered strawberries (they are best served chilled).

Makes 25-30 chocolate covered strawberries.
